Crown Melbourne Welcomes New Restaurant

Victor Churchill, a high-end butcher shop and dining experience, has announced it will open a new location at Crown Melbourne in Victoria, Australia.

Construction will start in the second half of this year, with doors opening in mid-2027. It will be located in a space on level three of Crown Towers.

Customers will enjoy a theatrical dining experience, overseen by Monty Koludrovic, an Australian-born chef and culinary director. Koludrovic previously worked in kitchens at locations across Los Angeles, London and Sydney.

In addition, the restaurant’s location within Crown Towers will offer views of the Yarra and city skyline.

Continuing a Legacy at Crown Melbourne

Anthony Puharich, fourth-generation butcher and Victor Churchill CEO, said the new site will continue his family’s legacy. He said it will be “unlike anything Victor Churchill has delivered.”

“Victor Churchill has always been about elevating butchery into an art form,” Puharich said. “Bringing this vision to Crown Melbourne is a dream — we’re creating a space that’s bold and dramatic — as much about theater, experience and design as it is about exceptional produce.”
