Bellagio and Major Food Group to Launch CARBONE Riviera
The Bellagio Resort & Casino in Las Vegas has partnered with the Major Food Group to develop CARBONE Riviera, a new fine dining experience that will launch later this year.
Located in the former Picasso space, CARBONE Riviera will be set against a backdrop of the Bellagio’s famous fountains.
Further details of the restaurant will be unveiled ahead of its launch this fall. However, it was announced that the new venue will be based on Italian-American dining, with a focus on seafood.
Major Food Group co-founders Mario Carbone, Jeff Zalaznick and Rich Torrisi worked with MGM Resorts International on the project. Swedish architect Martin Brudnizki designed the venue.
In addition, Bellagio will debut a new guest experience with a luxury Riva mini yacht. Part of the “Anniversario” collection, the 33-foot powerboat will allow guests to ride around the Bellagio’s Lago di Como.
Bellagio Pledges First-Class Experience
MGM Resorts Chief Content, Hospitality & Development Officer Ari Kastrati said the new venture will draw interest from visitors from around the world.
“Major Food Group has built a first-class culinary empire and is the perfect partner to help us bring to life a truly one-of-one experience in such a treasured location,” Kastrati said.
“The luxury dining experiences created by Mario, Rich and Jeff have gained significant attention from guests globally. Their ability to generate strong, on-going interest with their offerings to discerning diners is noteworthy.”
Major Food Group’s Carbone said the venue will be “one of the most important” restaurant spaces in the U.S.
“We at Major Food Group take tremendous pride in carrying forward storied culinary legacies,” he said. “At Bellagio, we will have the chance to create a dazzling new sibling to our iconic CARBONE, as well as a new chapter for the city’s dining culture with a timeless yet thrilling concept.
“We intend for CARBONE Riviera to be the culmination of the decades we have dedicated to our craft.”
